Making Marmalade in England

My husband and I just returned from taking a class in Marmalade making in England at the Jam Jar Shop (www.jamjarshop.com).  What a fantastic time.  Rosemary and Penelope from the shop were wonderful teachers as well as hosts.  The preserving jars and equipment (such as the Preserving Pans from Kilner, Inc in Ireland, scales, jam spoons, etc) that they sell -- well you just cannot find the type and quality here in the US that they have in Britain.  We spent the morning making Oxford Marmalade from Seville oranges, then the afternoon making Seville Orange Black Pepper Jelly and then Seville Orange curd (in addition to the lovely tea cakes, marmalade, ploughman's lunch and afternoon tea that they served us in between all the jamming).

All in all, I learned some new techniques and ended up trying to figure out how to get 28 jars of marmalade and jelly back to the US in our suitcases (which we did, luckily, without breakage or confiscation!).
